Does freezing harm fruit if you put it in the freezer at home?
Freezing is an industrial process in which the temperature in the fruit core decreases rapidly (± 15-20 min, depending on the product), without damaging the cell structure. Your freezer at home stabilizes the food in which it is. Home freezer, lowers the temperature relatively slowly (it takes an average of 24 hours). This can have a negative effect on the cell structure, because large ice crystals are formed in the cells, which, after thawing, make them less crunchy. This effect is completely avoided by industrial ultra-fast freezing of IQF.
Is the same 1kg of fresh and 1kg of frozen fruit?

No. A kilogram of fresh fruit contains, for example, pits, but also parts of the fruit, which are damaged. Frozen fruit, before immediate freezing, is cleaned, washed and ready for use, immediately after removing it from the freezer.
