Zamrznuto voće – Frozen fruits – Hladnjača Pantelić
Frozen plums from Pantelić are sourced from carefully selected orchards of local growers in central Serbia, a region renowned for its long-standing tradition of plum cultivation and favorable agro-climatic conditions. Our partner growers apply certified agricultural practices, with primary production fully compliant with Global G.A.P. and Mark Spencer Select Farms standards, ensuring high quality and complete traceability of every fruit.
Harvesting is carried out at the optimal stage of physiological ripeness to preserve the natural color, flavor, and nutritional value. Upon arrival at our cold store, plums undergo strict incoming quality control, followed by washing, hand sorting, and processing into the desired forms: halves, quarters, or dices. The freezing process is performed using IQF (Individual Quick Freezing) technology, which ensures that each piece remains separate, without clumping, and ready for further industrial use.
Pantelić Cold Store has a storage capacity of 4,000 tons and a daily freezing capacity of 50 tons, enabling fast processing and delivery of large volumes. Our frozen plums are intended for a wide range of customers in the confectionery, bakery, and dairy industries, the HoReCa sector, as well as export markets. All products are packed according to the customer’s requirements, with the option of format customization, while the most common packaging types are listed in the catalogue.

SORTIMENT
Origin and Agronomic Characteristics
Origin: Originally bred in the United States and introduced to Serbia several decades ago, Stenley has become one of the most widespread plum varieties in the country due to its adaptability and consistent yields. It thrives in various agro-climatic zones of Serbia, performing well on different soil types.
Growth and Yield: Vigorous tree with a broad, well-developed crown. Highly productive and regularly bearing fruit. Notable for its resistance to the most common plum diseases, including Sharka virus (Plum pox), and its tolerance to low winter temperatures.
Blooming and Ripening
Blooming: Mid to mid-late blooming period, which helps reduce the risk of frost damage in spring.
Ripening: Typically ripens from late August to early September, depending on the growing region, with uniform maturity that allows efficient harvesting for industrial use.
Fruit – Pomological and Physical Traits
Size and Shape: Medium-large to large, oval-shaped fruits with a uniform appearance.
Skin: Deep purple to blue, covered with a light natural waxy bloom.
Flesh and Flavor: Greenish-yellow flesh, firm, juicy, and sweet with a mildly aromatic flavor. Freestone pit.
Dry Matter Content: Moderate to high, contributing to excellent processing performance.
Technological Properties
Stenley is widely recognized as one of the best processing plums. It retains its texture and color after freezing and thermal treatment, making it suitable for IQF processing into halves, quarters, or dices. Its high soluble solids content provides a rich flavor profile in jams, marmalades, and other preserves.
Technological Significance and Uses
Ideal for IQF processing for both industrial and retail markets.
Extensively used in the confectionery and bakery industries (pies, pastries, strudels).
Excellent raw material for drying, jam production, compotes, and fruit purees.
Well-suited for premium frozen fruit mixes and export markets due to its uniform size and attractive appearance.
Origin and Agronomic Characteristics
Origin: Developed at the Fruit Research Institute in Čačak, Serbia, by crossing local and introduced plum varieties to achieve a cultivar with high yields, large fruit size, and versatile use. It is now one of the most popular plums in both domestic and export markets.
Growth and Yield: Medium to vigorous growth habit, with a rounded crown and excellent branching. Consistently high yields with stable fruiting. Moderate resistance to common diseases and good winter hardiness.
Blooming and Ripening
Blooming: Mid-blooming period, relatively safe from late spring frosts.
Ripening: Matures in late July to early August, earlier than Stenley, providing flexibility for staggered harvest schedules.
Fruit – Pomological and Physical Traits
Size and Shape: Large to very large fruit, oval to slightly elongated.
Skin: Dark blue to violet skin, with a pronounced waxy bloom.
Flesh and Flavor: Amber-yellow flesh, firm yet juicy, aromatic, with a balanced sweet-tart taste. Freestone pit.
Dry Matter Content: High, contributing to rich flavor and good processing yield.
Technological Properties
Čačanska lepotica is prized for its versatility. It maintains its shape and firmness after IQF freezing and cooking, making it equally suitable for fresh market sales and industrial processing. Its high pectin content and balanced sugar-acid ratio make it ideal for jam and preserve production.
Technological Significance and Uses
Widely used in IQF processing (halves, quarters, dices).
Suitable for fresh consumption, with an attractive appearance for retail packaging.
Extensively used in compote and jam production.
Favored by the HoReCa sector for desserts and fruit decorations due to its size, color, and flavor.
Upon arrival at the cold store, plums undergo a thorough incoming quality inspection, including visual assessment and checks for health safety. Only fruit that meets strict criteria proceeds to further processing. After washing and hand sorting, plums are processed into forms according to customer requirements:
Halves (hand cutted halves)
Quarters (hand cutted quarters)
Dices (6×6 mm or 10×10 mm)
Freezing is carried out using IQF (Individual Quick Freezing) technology in tunnels with a daily capacity of 50 tons, ensuring rapid temperature reduction and preservation of the natural color, flavor, and nutritional values. This process keeps each piece separate, without clumping, ready for industrial use.
Packaging is tailored to the needs of wholesale customers and the industry:
