Frozen sour cherries from Pantelić are sourced from carefully selected domestic orchards, primarily in central Serbia, a region renowned for the long-standing tradition of cultivating the Oblačinska variety. Our partner growers apply certified agricultural practices, with primary production fully compliant with Global G.A.P. and Mark Spencer Select Farms standards, ensuring high quality and complete traceability of every batch.
Harvesting is carried out at optimal technological ripeness to preserve the natural acidity, aroma, and nutritional values characteristic of this fruit. Upon arrival at our cold store, the fruit undergoes strict incoming quality control, followed by washing, hand sorting, and pitting. The freezing process is performed using IQF (Individual Quick Freezing) technology, ensuring that each fruit remains separate and ready for further industrial use without loss of shape or quality.
The sour cherries we process come exclusively from carefully selected domestic orchards, primarily in central Serbia, a region known for the premium quality of the Oblačinska variety. Our cooperation with growers is based on long-term agreements with trusted agricultural holdings whose primary production is certified according to Global G.A.P. and Mark Spencer Select Farms standards.
Pantelić Cold Store holds international certifications such as IFS Food (High Level), SMETA 4-Pillar, Kosher, Halal, as well as certifications for organic product processing in compliance with EU Organic, NOP, and Naturland standards. These certifications ensure that every step—from harvest, through processing and packaging, to delivery—is carried out in accordance with the highest requirements for food safety, traceability, and quality preservation.
Varieties
Origin and Agronomic Characteristics
Origin: A traditional domestic sour cherry variety originating from Serbia, named after the village of Oblačina near Niš, where it was first widely cultivated. Today, it is the most widespread sour cherry variety in Serbia and one of the most important industrial varieties in Europe.
Growth and Yield: Tree of low to medium height with a rounded, dense canopy. Distinguished by exceptionally high yields and early bearing. Highly tolerant to low winter temperatures and resistant to most common sour cherry diseases.
Blooming and Ripening
Blooming: Mid-early, uniform, and abundant, contributing to consistent yields.
Ripening: Usually in the first half of July, with even fruit maturation, making it ideal for organized industrial harvesting.
Fruit – Pomological and Physical Traits
Size and Shape: Small to medium-sized fruits, spherical in shape.
Skin: Dark red to burgundy, with a smooth surface.
Flesh and Flavor: Dark red flesh, firm, juicy, with a pronounced tart flavor and intense aroma—hallmarks of high-quality sour cherries. The juice is deep red in color.
Dry Matter Content: Moderate, with high acidity levels, making it especially suitable for processing.
Technological Properties
Oblačinska sour cherry is prized for its consistent quality and suitability for industrial processing. It is an excellent raw material for IQF freezing, particularly in the form of whole pitted cherries, and is also suitable for slicing into smaller pieces. During freezing and thermal processing, it retains its color, aroma, and texture.

Upon arrival at the cold store, sour cherries undergo a thorough incoming quality inspection, including visual assessment, measurement of ripeness parameters, and checks for health safety. Only fruit that meets strict criteria proceeds to further processing. After washing and hand sorting, cherries are pitted and, if necessary, further sorted to ensure uniform quality.
The freezing process is carried out using IQF (Individual Quick Freezing) technology in tunnels with a daily capacity of 50 tons, enabling rapid and efficient cooling while preserving the natural color, flavor, and nutritional values. This method ensures that each fruit remains separate, without clumping, and ready for further industrial use.

IQF Sour Cherry – Pitted
Oblačinska variety sour cherries, carefully selected and pitted. Intended for industrial processing and wholesale, ideal for compotes, jams, fruit toppings, cakes, and frozen fruit mixes.
IQF Sour Cherry – Sliced
High-quality sour cherries, cut into pieces for easier use in the confectionery and bakery industries. Suitable for fillings, creams, ice cream, pies, and other products requiring smaller fruit pieces.
All variants are available in packaging sizes from 300 g to 10 kg (click-lock cartons, punnets, industrial cartons), and packaging can be fully customized to the customer’s specifications.
