Each banana is harvested at three-quarters ripeness, the perfect stage when starches have converted to natural sugars but the fruit retains its structural integrity. Upon arrival at our facility in Šabac, Serbia, they undergo a precisely controlled ripening process before being hand-peeled and sliced into perfect bite-sized coins.

The magic happens in the freezing. While berries offer a tart, juicy burst, banana develops something entirely unique: an ice-cream-like creaminess when flash-frozen at –30°C. Upon arrival at our Šabac facility, green bananas undergo a precisely controlled ethylene ripening process over 4–6 days. This allows us to achieve the exact sugar-to-starch ratio (approximately 20:80) that creates the signature creamy texture when frozen, unlike berries that remain icy, banana transforms into something resembling premium gelato.

Each banana is then hand-peeled and sliced into uniform coins (approximately 12–15mm thickness) to ensure even chocolate coating and consistent bite size. The process demands gentle handling, Cavendish bananas are delicate, and surface damage would compromise both appearance and freezing quality.
