Our carefully selected apricots come from controlled orchards of local growers whose primary production is certified to the highest international standards (Global G.A.P., Mark Spencer Select Farms). Harvesting is carried out at the optimal stage of ripeness to preserve the natural color, aroma, and nutritional value. Immediately upon arrival at our cold store, the fruit is hand-sorted and processed, then frozen using IQF (Individual Quick Freezing) technology, which ensures that each fruit or fruit piece remains separate, without clumping, and ready for further industrial use.

Pantelić Cold Store has a storage capacity of 4,000 tons and a daily freezing capacity of 50 tons, allowing us to quickly and efficiently process large volumes. Our frozen apricots are available in various forms—halves, quarters, and dices—tailored to the needs of customers from the confectionery, bakery, and dairy industries, the HoReCa sector, and export markets. All products are packed according to the customer’s requirements, with the most common formats intended for industrial use.

Origin and Certification

The apricots we process come exclusively from carefully selected orchards of local growers in central Serbia, a region renowned for its favorable climate and fertile soil. Our cooperation is based on long-term agreements with trusted agricultural holdings whose primary production is certified according to Global G.A.P. and Mark Spencer Select Farms standards.

In addition, our cold store holds international certifications such as IFS Food (High Level), SMETA 4-Pillar, Kosher, Halal, as well as certifications for the processing of organic products in accordance with EU Organic, NOP, and Naturland standards. These certifications ensure that every step—from harvest, through processing and packaging, to delivery—is carried out in compliance with the highest requirements for food safety, traceability, and quality preservation.

Variety – NS-04 (Novosadska 4)

Origin and Agronomic Characteristics

Selection and Breeding: NS-04 originated from selection within a natural population during the 1980s and was officially recognized in 2004 as a new variety by the Institute of the Faculty of Agriculture in Novi Sad.

Vegetative Growth and Blooming: This variety exhibits reduced vegetative vigor (8–20% lower compared to the Hungarian Best variety) and blooms slightly earlier—3–4 days before Hungarian Best.


Fruit and Pomological Traits

Fruit Size and Shape: The fruits are large and of excellent appearance, making them particularly suitable for industrial processing.

Color, Flavor, and Texture: They are distinguished by an exceptional aroma, juiciness, and fine texture—hallmarks of high-quality fruit.


Technological Fruit Properties

Dry Matter and Acidity: NS-04 has a high dry matter content—on average 14.57% (by refractometer) and 15.87% (after oven drying)—and a significantly higher acid content compared to Hungarian Best.

Pectins and Minerals: Fruits of the NS-04 variety contain pectins and minerals in amounts exceeding standard levels, which is highly relevant for processing technology.

Selenium: Among all tested varieties, NS-04 had the highest selenium content, enhancing the nutritional value of the final products.


Organoleptic Evaluation (Compotes)

Flavor and Aroma: In a three-year study, NS-04 compotes received high scores for flavor (5.0 out of a maximum of 6) and aroma (2.8 out of a maximum of 3).

Firmness and Texture: Consistency was rated at 3.7 out of 5, while the overall sensory score reached 16.5 out of a possible 20—slightly higher than the standard (Hungarian Best: 16.1).


Advantages of the NS-04 Variety for Industrial Processing:

Variety – NS-06 (Novosadska 6)

Origin and Agronomic Characteristics

Selection and Breeding: NS-06 was developed in 1985 at the Faculty of Agriculture, University of Novi Sad, through selection from a natural population.

Growth and Yield: The tree exhibits medium to strong vigor, with a crown ranging from round to elongated-round shape. It is highly vigorous, with abundant and consistent yields. Productivity is considered stable and intensive.


Blooming and Ripening

Blooming Time: Late blooming—2–4 days after the Hungarian Best variety (control variety).

Ripening Period: Harvesting takes place in mid-July (approximately from July 15 to July 20), similar to other late-blooming Novi Sad varieties.


Fruit – Pomological and Physical Traits

Shape and Color: Medium-large to large fruits, round and slightly flattened, with light-orange skin that develops 25–35% red blush on the sun-exposed side.

Flesh and Flavor: Light-orange flesh, firm, juicy, aromatic, and flavorful, with a freestone pit. The kernel is sweet.

Dry Matter: Contains about 16% dry matter, indicating well-preserved nutritional and sensory qualities.

Mesocarp Yield: The flesh (mesocarp) yield is approximately 95%, demonstrating high processing efficiency.

Attractiveness: High yield potential, fruit quality, and vigor make this variety highly suitable for industrial processing.

Suitable for Dual Markets: Thanks to its sweet flavor and freestone characteristic, this variety is well-suited for both fresh consumption and processing (jams, confections, beverages).

Origin and Agronomic Characteristics

Origin: A traditional domestic variety originating from central Serbia, particularly prevalent in the Šumadija and Pomoravlje regions.

Growth and Yield: Medium-vigorous tree, resistant to low temperatures, with stable and consistent yields. Suitable for cultivation on various soil types.


Blooming and Ripening

Blooming: Mid-early to mid-late blooming, which reduces the risk of damage from late spring frosts.

Ripening: Mid-July—uniform ripening, an advantage for industrial harvesting and processing.

Size and Shape: Medium-large to large, slightly oval in shape.

Color: Golden-orange skin with subtle pink or reddish blush on the sun-exposed side.

Origin and Agronomic Characteristics

Origin: A Hungarian variety originating from the Keckemet region, long established and well adapted to the agro-climatic conditions of Serbia.

Growth and Yield: Vigorous tree with a well-developed crown, producing abundant and regular yields. Resistant to common apricot diseases and relatively tolerant to low temperatures.


Blooming and Ripening

Blooming: Mid-late blooming, which reduces the risk of damage from late frosts.

Ripening: Mid-July, with relatively uniform maturity, facilitating harvest organization for industrial processing.


Fruit – Pomological and Physical Traits

Size and Shape: Large and uniform fruits, slightly oval to round in shape.

Color: Orange skin with pronounced reddish blush on the sun-exposed side.

Flesh and Flavor: Firm, orange flesh, rich in aroma and natural sugars, with excellent tolerance to freezing and thermal processing. Freestone pit.

Processing and Packaging Technology

Upon arrival at the cold store, apricots undergo a thorough incoming quality inspection, which includes both visual and health checks. Only fruit that meets strict criteria proceeds to further processing. After washing and hand sorting, apricots are processed into various forms, depending on customer requirements:

  • Halves (hand cutted halves)

  • Quarters (hand cutted quarters)

  • Dices (6×6 mm or 10×10 mm)

Freezing is carried out using IQF (Individual Quick Freezing) technology in tunnels with a capacity of 50 tons per day, ensuring rapid achievement of low temperatures while preserving the natural color, flavor, and nutritional values. This process guarantees that each piece remains separate, without clumping, ready for industrial use.

Packaging is tailored to the needs of wholesale customers and industry:

  • Bags: 500 g, 750 g, 1000 g, 2500 g

All products are conventional and produced in accordance with the regulations of the EU, FDA, Canada, and South Korea markets. Packaging is customized according to the customer’s requirements, with the option to adapt formats.

IQF Apricot – Halves (hand cutted halves)
Premium-quality apricots from certified orchards, carefully cut into halves. Intended for industrial use and wholesale where the visual quality of the fruit is important—ideal for premium frozen mixes, confectionery products, and retail consumer packaging.

IQF Apricot – Quarters (hand cutted quarters)
High-quality apricots cut into quarters, suitable for the confectionery and bakery industries, as well as for the production of fruit fillings, cakes, and desserts. Offers an excellent balance between visual appeal and ease of use in recipes.

IQF Apricot – Dices (6×6 mm or 10×10 mm)
Product made from selected fruit, cut into dices of various sizes according to customer needs. Perfect for industrial production of yogurts, fruit toppings, muesli, ice cream, and other processed foods where even distribution of fruit pieces is essential.

All variants are available in packaging sizes from 300 g to 10 kg (click-lock cartons, punnets, industrial cartons), and packaging can be fully customized to the customer’s specifications.
